  • Instructions

    1-In a large bowl, combine the ground beef, chopped onions, bulgur, tomato paste, pepper paste, cumin, black pepper, salt, paprika, and fresh parsley. Mix well until all the ingredients are evenly incorporated.

  • 2-Take a small portion of the mixture and shape it into a small ball, approximately the size of a walnut. Repeat with the remaining mixture to make the köfte balls.

  • 3-Heat vegetable oil in a deep frying pan or pot over medium heat. Carefully place the köfte balls into the hot oil and fry them until they are golden brown and cooked through. Remove them from the oil and set aside on a paper towel-lined plate to drain excess oil.

  • 4-Preheat the oven to 180°C (350°F).

  • 5-Take a yufka sheet and cut it into half. Place one half of the yufka on a clean surface and brush it lightly with vegetable oil. Place a köfte ball at the edge of the yufka and roll it up tightly. Repeat with the remaining köfte balls and yufka sheets.

  • 6-Place the rolled köfte-filled yufka rolls on a baking sheet and brush them with a little more vegetable oil. Bake in the preheated oven for about 15-20 minutes, or until the yufka turns golden brown and crispy.

  • 7-Remove the yufkalı darüzziyafe köftesi from the oven and let them cool slightly before serving.

  • 8-Serve the köftesi warm as an appetizer or main course. They can be enjoyed on their own or with a side of yogurt or salad.
